There is no "healthy weight" as chinchillas range widely in size and shape. Anywhere from 500 - 800 grams is about average.
However, I have healthy rescue chins who are only ~450 g (they have extremely small frames) all the way up to a healthy show quality chin who is 1100 g. Chin weights range and there is no set healthy weight.
As long as you can't see your chin's ribs or his spine isn't protruding, he is probably fine.
