I realize there's quite a bit of size difference in the whole species. But for a black velvet, what is a target weight? I'm getting a kitchen scale to keep track of Nibbs weight gain/loss to help me keep him healthy.
 
There is no target weight. A breeding chin should be over 600 grams but I had a pet bv that was only 490 fully grown. As long as your chin isn't loosing weight don't worry.
 
Healthy in chinchillas means dry nose, dry/not greasy coat, bright alert eyes, full (not bony) body :) that's healthy and weight has nothing to do with it!
 
I like to monitor weight in my chins, but I don't feel it is as important as keeping track if they are eating, drinking and pooping fine. A 10 gram flucuation is pretty normal depending on the time of day you weigh, and I usually see them put on a little extra weight in the cooler months even though the temps inside don't flucutate much.
