Questions about processing wood.

Hi all,
Here is my question..Why when processing say apple wood does everyone take all the leaves and flowers off? They can eat Apple leaves right? You can buy
dried apple leaves for your chin right?
What about dog wood? can they just have the wood or can they have dried leaves and flowers? :hair:
