I recently received an order of apple wood. All of it is soft and when you trie to break the pieces they tear and you can see green wood. I think, they need to be dried but am not sure. What do any of you think?
 
Yup, I would definitely dry them first! You could maybe bake them in a low oven for a couple of hours. I did this a few months ago, slightly charcoaled them and the chins went mad for the taste :).
 
I gave green wood once, they hated it so you will end up wasting it. Drying low heat brings the sugars out of the wood to the surface (this is what I was told) and makes it tasty.
 
I agree. Low heat for a few hours. I usually bake at 200 for two to three hours with the wood spread out on cookie sheets.
