Leaving out the shelving is a cool idea for sure. I have my bottom shelves assembled though and find that it isn't too bad to clean the top level because I use liners in my FNs. I pull out the liners, give the pan a quick wipe/vacuum and replace everything. I do have to use a stepstool though, being only a bit over 5' tall...
