I know hedgies should have a diet with a higher amount of protein compared to the crude fat. Does anyone know the min/max to look for in the food. I am going to go food shopping soon, and I noticed a lot of natural foods don't have the diet/senior formulas.

Maximum 35% protein. Too high in protein can cause renal failure.
Depending on the individual hedgehog, some regular diets are okay as far as the fat content. Somewhere around 10% is good but a bit higher won't hurt unless hedgie is prone to being overweight.
