I was just recently diagnosed with type 2 diabetes (actually I am on the verge of pre-diabetes and diabetes) and my hardest adjustment is eating right...I love my pizza, pasta, and sweet stuff. :( Does anyone have any yummy and easy to make recipes for diabetics they could share?
 
Aww, that's too bad. I am a type 2 also. I will think of more things and add to this post. Corn tortillas are pretty low in carbs, try using one for the pizza crust. I don't worry about sugar in fresh fruits and veggies myself, but do avoid the sugar in pop, candy and stuff like that. When you do crave something sweet one or two little hard wrapped candies, you know like the red and white peppermints or any of them are a lot of bang for the buck. As far as pasta...I love it too. I just eat it, but some ideas would be for you to check out the diff carb count on whole wheat pasta, spinach or veggie pasta and maybe gluten free pasta. Storebought pasta sauce often has a lot of sugar added, you may try making your own from canned tomatos at the store.
 
Stackie, I suggest looking into the paleo or primal way of eating. Type II diabetes can be totally reversed through diet changes.

I totally agree with this. Much as you like your pasta, pizza and wheat flour it is far better to cut them from your diet. While you continue to eat carbs, you will continue to feel hungry and you will continue to crave carbs ..... it is vicious circle.

My Boss has type II diabetes and has cut the carbs in his diet - since he has done that he has lost well over 2 stone (30+ Lbs) and has almost halved his diabetes medication (much to his diabetes specialist nurse's delight - she was really pleased to reduce my Boss' meds). Just through diet change - he is also feeling better than he has in a long, long time and his blood glucose levels are dramatically lower.
 
I know I have to cut them all from my diet. My doctor & dietician have all given me that talk haha. That is why I am asking for diabetic friendly recipes to replace them with. :)) Diabetes runs in the family but unfortunately none of my family members are really that great about following a good diet plan. I've been following the paleo diet and had a paleo breakfast & lunch today.

I found the hardest thing was to replace the sugars, having to go GF was a double whammy. I never turn down a fudgecicle or ice cream or honey. Upping your exercise level will also make a huge difference in a diabetes diagnosis, even just walking on work breaks.

These are not necessarily healthy meals, but they are fast, Gluten Free, low in sugar, great for if you need to exercise and it's usually stuff you have around the house.

Tools: 6" nonstick skillet, spatula. Maybe a bowl for the rolls.
  • Eggs and Bacon (nomnomnomnom) : 10 minutes or less.
  • Scramble that nomnom with onions and cheddar :15 minutes
  • Powdered potatoes with cheddar, powdered Ranch, corn and ham :10 minutes
  • Salmon/Fish with lemon, or apple sauce, or the raspberry chipotle sauce I just picked up .... you can throw anything on top of fish in a skillet. "10 minutes or less
  • Gluten Free ham and cheese rolls (Chebe bread mix, ham, garlic powder, cheese, sometimes corn if I have it) : 25 minutes - you can really put anything in those bread mixes.
  • Jasmine rice to put the salmon and veggies over for lunch leftovers... nuke it in the microwave (17 minutes @ 50% power)
  • Sautéed Veggies with Dan's, Lowrey's, Tony's or Slap yo' mamma :15 minutes+ depending on veggie size and fresh vs. frozen.
  • Fried rice out of the leftover rice for lunches (GF teriyaki, egg, onions, veggies... whatever meat you have on hand) : 25 minutes
  • For emergencies I keep a container of Amazing Meal around - chocolate flavored of course! Great stuff, texture is nasty and taste is weird, I freeze almond milk and blend it with that. It'll give you some clean energy for 4-5 hours. : 5 minutes

    Edited to say that I replace almost all oil and eggs (except eggs and bacon... ) in recipes with ground chia seed. It is like a powerfood and acts just like an egg. It takes the ham and cheese rolls from a side to a solid meal.

My mom has some really great recipes for making pizzas that are delicious and diabetic friendly. She was 240lbs, 5'3" when she was diagnosed with type 2 diabetes last year. Since she watched her grandfather die from diabetes by refusing to change his diet, she immediately went on a rampage at her house. I got a lot of pasta that week...

She's now lost over 70lbs and is completely off of her glucophage. She eats almost disgustingly healthy and does some sort of activity every day.

I make vegetable frittatas that make an awesome dinner or breakfast. Very little carbs and you can bake them in 6 single serving quiche dishes to make it easier to serve.



Garden Vegetable Frittata

Ingredients
1 pound asparagus
6 ounces button mushrooms
1 tbsp olive oil
1 clove garlic
1 shallot
1 small or 1/2 large zucchini

6 large eggs
1/3 cup 1% milk
1 tsp salt
1/4 tsp freshly ground black pepper
dash nutmeg
1 tbsp chopped chives

1/4 cup freshly grated parmesan cheese
2 medium or 1 large tomato

Protein: 10.5g


1. Preheat the oven to 350 degrees.


2. Wash and trim asparagus and cut into 1-inch long pieces. Blanch asparagus in boiling water for 1-2 minutes and immediately shock in ice water. Drain and dry asparagus, set aside.


3. Clean and slice mushrooms. In a skillet, heat olive oil and saute the mushrooms over medium heat for about ten minutes. While they cook, grate or finely mince the garlic and shallots. Add the garlic and shallots to the mushrooms and continue to cook for about two minutes more. Remove the mushroom mixture from the heat and set aside.


4. Cut the zucchini in half lengthwise and slice into thin, half-moon shapes.


5. In a large bowl, beat together eggs, milk, salt, pepper, nutmeg, and chives. Add asparagus, mushroom mixture, and zucchini.


6. Lightly spray a 2-quart baking dish (11 x 7 x 1.5) with cooking spray. Pour the egg and vegetable mixture into the dish.


7. Thinly slice tomatoes and arrange on top of the egg mixture. Sprinkle parmesan cheese over the top and bake in the oven until set, about 30-35 minutes. If desired, place under the broiler for 2-3 minutes to brown the top.


8. Allow the frittata to cool before serving. Frittata can be made ahead and chilled, covered, overnight -- allow to come to room temperature before serving.


Makes six servings
 
Mmm, thanks Tara & Tab! Both of those sound awesome! My hardest adjustment is really just cooking my own meals..I am always on the go being in school and working 2 jobs so it was always just convenient to pick something quick up. I'm going to have to start making meals in advance and putting them in the fridge to bring with me the next day, so anything that keeps well is another thing I am looking for.
 
There are lots of on-line resources for paleo recipes. http://fastpaleo.com/ is one of my favorites.

I used to be a carb and sugar junkie and I felt ill all the time and had horrible acid reflux. Since giving up all grains and sugar I feel so much better.
 
I grill up a few chicken breast at the beginning of the week so it's an easy to grab item on my way out the door in the mornings for my lunches. Egg white omlettes are good to.
