I just got a hedgehog today (named him Sonic) and I have a few questions:

1. I know most people say to get cat food but my dad bought me some SunSeed Vita Exotic Hedgehog Formula food. Is this food any good? Ingredients are as follows

2. I've heard that some hedgehogs don't eat for a few days when they come to a new home. Is this true?

Of the "hedgehog" foods out there, it isn't the worst (ie, hedgie won't slowly starve to death on it), but it's not terribly good. You can certainly feed, but if you do, please add at least one other kibble to it - a nice high quality cat kibble.

Not precisely. If they don't eat for a few days, then they're at risk for fatty liver disease. While hedgie might eat fairly minimally, something should be in hedgie's belly. I'd be "okay" with one night of not eating, but I'd make sure to put some kibble right next to hedgie -- wherever s/he's sleeping so that it's extra easily accessible. If still no eating the next day, then I'd start syringing a bit of food/water.
